I always hate it when I go to a website for a recipe and there are a ton of words to scroll through and read before I finally get to the recipe at the bottom. Ugh! I will try to avoid that here, but I do want to share that this is truly one of the easiest banana bread recipes ever and the MOST delicious. This was my grandmother's recipe and we make it allllll the time in our house. It’s delicious anytime you are in the mood for banana bread, but for us it turns out to be a great way to use those bananas that are on their way out. Enjoy!
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
pinch of slat
1 1/2 cup of flour
Makes 1 loaf. Preparation time - 5 minutes.
Preheat oven to 350 degrees F
With wooden spoon, mix butter into bananas in large bowl
Mix in the sugar, egg, and vanilla
Sprinkle baking soda and salt over the mixture and mix in
Add flour last, mix
Pour mixture into buttered 4x8 loaf pan. Bake for 1 hour (start checking it after 30 minutes, and then tent with foil if the top gets too dark). Cool on rack.
